Salted Caramel Ice Cream

Ingredients
- 2/3 Cup Heavy Cream
- 2 Cups Whole Milk
- 175g + 25g Granulated Sugar
- 1 Vanilla Bean
- Kosher Salt
- 5 Egg Yolks
Directions
- Make Caramel: Heat sugar and water until amber.
- Mix Caramel: Add heavy cream and butter, then cool.
- Prepare Custard Base: Mix milk, heavy cream, and salt; heat. Whisk egg yolks and sugar, then temper with hot milk mixture.
- Combine: Add custard to caramel; cook until thickened.
- Chill: Strain mixture and chill.
- Churn: Churn in an ice cream maker, then freeze.
