Directions

  1. Make Caramel: Heat sugar and water until amber.
  2. Mix Caramel: Add heavy cream and butter, then cool.
  3. Prepare Custard Base: Mix milk, heavy cream, and salt; heat. Whisk egg yolks and sugar, then temper with hot milk mixture.
  4. Combine: Add custard to caramel; cook until thickened.
  5. Chill: Strain mixture and chill.
  6. Churn: Churn in an ice cream maker, then freeze.
